Easy Three Cheese Pinwheel Appetizers




Ingredients:
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup shredded pepper jack cheese
  • 2 tablespoons cream cheese, softened
  • 1 tablespoon mayonnaise
  • 1 can Pillsbury crescent rounds
  • 1 tablespoon chopped basil
  • 2 tablespoon cooked onion
  • 1 garlic clove
Directions:
1. Heat oven to 375 degrees F.
2. In small bowl, mix all cheeses and mayonnaise until well blended and soft. Add basil, onion, and garlic.
3. Roll dough into long rectangle. Spread cheese mixture evenly over dough.
4. Starting at shorter side, roll up into a cylinder. Set in fridge until ready to bake.
5. When firm, cut into 16 slices. Place, cut side down, on cookie sheet.
6. Bake 12-15 minutes or until golden brown.

Basic Chocolate Pinwheel Cookies





Ingredients
  • 1 cup butter, softened
  • 2 cups sugar
  • 1/2 cup packed brown sugar
  • 2 eggs
  • 3 teaspoons vanilla extract
  • 3-3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/8 teaspoon salt
  • 1/4 cup baking cocoa
Directions
  1. In a large bowl, cream butter and sugars until light and fluffy. Add the eggs, one at a time, beating well after each. Beat in vanilla. Combine the flour, baking powder and salt; gradually add to the creamed mixture and mix well.
  2. Divide dough in half; add cocoa to one portion. Divide each portion in half. On a baking sheet, roll out each portion between waxed paper into a 12-in. x 10-in. rectangle. Refrigerate for 30 minutes.
  3. Remove waxed paper. Place one chocolate rectangle over a plain rectangle. Roll up tightly, jelly-roll style, starting with a long side; wrap in plastic wrap. Repeat with remaining dough. Refrigerate for 2 hours or until firm. Unwrap and cut into 1/4-in. slices.
  4. Place 2 in. apart on lightly greased baking sheets. Bake at 350° for 10-12 minutes or until set. Remove to wire racks to cool. Yield: 6 dozen.

Guilt-Free Apple Dessert




Instructions:
  1. Start with an Apple. (I LOVE Gala ones).
  2. Slice said apple.
  3. If you don't have an apple slicer/corer, go buy one. They are so worth the money.
  4. Throw the core away, put the apple in a bowl, and add some water (about 1/4 Cup or so).
  5. Next step not pictured: put the bowl of apple slices in the microwave, COVER, and cook for 2 minutes. Now carefully pour all the water out. You can leave the apple in the bowl or put it on a plate.
  6. Once you've drained the water, sprinkle cinnamon all over the apple. NOTE: Use straight cinnamon. You do not need a cinnamon/sugar mixture for this.
  7. Now enjoy eating them (careful, they are H-O-T).
  8. They taste like apple pie without the crust.
  9. They are so delish. Even my kids like them.

Watermelon Spritzers





Ingredients
  • 2-½ pounds Fresh Watermelon (seedless If You Can Find It), Rind Removed And Cut Into Cubes
  • 3 whole Lemons (seedless If You Can Find It), Juiced
  • 2 Tablespoons Honey
  • 2 cups Chilled Seltzer Water (more Or Less)
  • 6 sprigs Lemon Balm Or Mint, For Garnish (optional!)
Instructions
  1. Place the watermelon, lemon juice and honey into a food processor. Process until smooth.
  2. Strain the mixture into a large bowl, pressing the juice out of any seeds or pulp that remains in the strainer.
  3. Pour the juice into a large pitcher and chill until you’re ready to drink.
  4. Serve with a splash of seltzer water and lemon balm or mint, if using.
