Peanut Butter Energy Balls





Ingredients:
  • 1/2 cup walnuts
  • 1/2 cup chopped pitted dates
  • 1/2 cup almonds
  • 1/2 cup pure maple syrup
  • 1/4-1/2 cup Peanut butter or Almond Butter(depends on how much PB flavor you want, add more to taste)
  • 1/2 cup finely shredded coconut(plus more for rolling)
  • 3/4 cup oats
  • 2-3 TB Carob Chips(or chocolate chips)
  • 1 tsp. Vanilla
Directions:
  1. Gather your ingredients,
  2. Using a food processor or high speed blender, add walnut and process until chunky crumbs.
  3. Then add dates, and process until chunky crumbs again.
  4. Next add almonds and carob chips, and process again. You don’t want it to be fine crumbs, you want it a little chunky. Not HUGE chunks though.
  5. Then add maple syrup, PB or AB, and vanilla, and process until combined.
  6. Next add coconut and oats, and process until chunky and combined.
  7. Roll into balls. Mixture will be sticky.
  8. You can roll them out plain, Or you can be cool and roll them in coconut… =]
  9. Then store in the fridge or freezer when done.

Raspberry Cream Cheese Pretzel Jello




Ingredients
  • 6 oz package Raspberry Jell-O
  • 2 cups boiling water
  • 2 cups pretzels
  • ¼ cup sugar
  • 1 stick butter
  • 1 (8oz) package cream cheese - softened
  • 1 (8oz) package Cool Whip - thawed
  • 1 cup sugar
  • 1 bag frozen raspberries - thawed in refrigerator
Instructions
  1. Pre-heat oven to 350°F.
  2. Combine 6 Oz packet of Jell-O with 2 cups of boiling water and set aside to cool to room temperature.
  3. Crush 2 cups of pretzels in a ziploc bag, using a rolling pin.
  4. Melt 1 stick of butter than add ¼ cup sugar in saucepan. Add pretzels and mix together.
  5. Lightly press pretzel mix into a 13x9 -inch pyrex dish and bake for 10 minutes at 350°F, then cool to room temperature.
  6. While pretzel mix is cooling down, beat 8 oz of cream cheese and 1 cup sugar on medium/low speed until well-combined.
  7. Next, stir in Cool Whip using a spatula and mix until well combined.
  8. Spread mixture over cooled pretzels and go all the way to the edges of the dish to create a seal. You don't want the jello to leak into the pretzels. Refrigerate 30 minutes.
  9. Place raspberries evenly on top of the cream filling..
  10. Pour Jell-O over raspberries and refrigerate until jello is set.

Skillet Baked Stuffed Rigatoni





Ingredients
  • 1lb rigatoni pasta
  • 8 ounces ricotta cheese
  • 4 ounces goat cheese
  • Kosher salt
  • Fresh black pepper
  • 3 cups marinara (or good quality store bought marinara)
  • 1 handful fresh basil leaves
  • ½ cup finely grated parmesan cheese
Instructions
  1. Preheat the oven to 350 degrees.
  2. Bring a large pot of salted water to a boil. Add the rigatoni and cook to 2 minutes shy of al dente. Drain them.
  3. In a medium sized bowl, combine the ricotta cheese and the goat cheese and stir until well combined. Season with kosher salt and black pepper.
  4. Put the cheese mixture in a pastry bag or Ziploc and snip the end off. Pipe the room temperature cheese into the rigatoni noodles.
  5. Pour 1 cup on the bottom of a 10” skillet. Follow that with the basil leaves.
  6. Line up all the noodles in concentric circles, 1 layer at a time.
  7. When all of the noodles are in the pan. Pour the remaining sauce over the top of the noodles.
  8. Sprinkle the parmesan over the top of the sauce. (if you want to refrigerate, this is the point where you would do that).
  9. Bake the pasta about 15 minutes until the edges are getting golden and the dish is very hot.
  10. Serve hot!
